MORNINGS MADE. The Muffin Diaries Part 3 - Keto Granola Blueberry Muffins
/Keto. I am embarrassed to admit - it used to be a ‘bad’ word in this house. Refer to part one of the muffin diaries. I was the performance RD - carbs. carbs. carbs. Plus intuitive eating, no foods are off limits! But, time and time again, life can be quite humbling.
My 20’s were fueled by carbs. Carbs are not bad and that worked well for me for decades! Even when protein became queen (see Muffin Diaries Part 2), carbs were still there, supporting me in all the ways! I did have to go gluten free after having my second child and that was a smack in the face - I HATE diet trends. But, turns out, I needed to make that change (a story for another day).
Keeping my long keto story short but, I was diagnosed with a rare neurological disorder - runner’s dystonia - and started playing around with nutritional treatments rather than conventional medications and here I am, on a medical therapeutic ketogenic diet. Regardless of whether or not this will be a life long commitment moving forward, I have seen great and unexpected growth and gains both physically and mentally while doing this. It has been a gift for me and I am LOVING ALLLL the fat! So. Much. Thank goodness because my daily goal is to get 80-90% of my calories from FAT! But also, I know how beneficial it is for my kids and their growing brains! They get the healthy carbs too but, let’s not be afraid of fat for ourselves or our kids.
I was determined to come up with some delicious healthy keto options for our family and we LOVE these muffins and the granola! The granola is my absolute fave!
I LOVE that each of our muffins (bites, granola, seeds, and breads too) has a story to tell! I 100% believe in the power of food for healing and whether you are looking for more veggies, protein, healthy fats, or fiber, MORNINGS MADE. has it all!
